Tasting notes
-
Appearance:
the brilliant colour reveals a beautiful golden hue with light rosewood highlights and a fine, delicate effervescence
- Nose: open and expressive, with a mineral note and aromas of fresh fruit
- Palate: an enveloping texture underlined by a mineral freshness where citrus aromas mingle with notes of exotic fruit enhanced by an elegant bitterness
HOW TO STORE AND SERVE
Store your bottles in the dark, at a temperature of between 7°C and 18°C.
The ideal serving temperature is between 3°C and 6°C. The wine should be served in a flute or tulip-shaped glass that’s wide enough for the complex aromas to come through and for the bubbles to develop.

BRINGING TOGETHER TRADITION AND INNOVATION
Malizeth Blanc de Blancs is the result of several years of research and development, combined with the heritage of our Champagne expertise.
TERROIR AND GRAPE VARIETIES
The terroir and climate of the Haute Vallée de l’Aude provide ideal conditions for the Chardonnay grape variety.
We carefully select the grapes from plots located at the top of the hillsides, to ensure good concentration and a greater complexity of aromas.
- Terroir of the Haute Vallée de l’Aude, Languedoc region
- Grape variety: 100% Chardonnay
- An altitude of over 300 m
- Ferruginous red clay soil on a bed of limestone gravel
- Climate of the foothills of the Aude Pyrenees, with a late spring and cool autumn
Growing the vines and making the wine
The vines are grown and the wine made according to the highest standards and traditional best practices. These are the processes during which the wine takes shape and acquires all its flavours.
- We select the best plots and monitor ripeness to determine the optimum date for harvesting
- The grapes are harvested by hand
- The grapes are sorted, destemmed and pressed
- Alcoholic fermentation (and malolactic fermentation depending on the vintage)
- A small proportion of the wine is aged in oak barrels to increase complexity
De-alcoholisation
De-alcoholisation is a delicate process that requires technical expertise, cutting-edge technology and in-depth knowledge of wine in order to gently remove all the alcohol (0.0%) while preserving the wine’s original aromas.
- Carried out in France
- We use the latest and most innovative method (low-temperature vacuum distillation)
